New world Italian glamour lands in The Hills this spring with an impressive new restaurant and bar featuring an upmarket Italian restaurant and bar, craft distillery, private dining areas and dedicated function space.
Featuring an open kitchen where guests can watch the chefs in action, the dining area spills into a decadent cocktail bar with intimate lounge seating perfect for a nightcap or aperitif.
The artisan modern-Italian restaurant, Sarino’s, features sophisticated Italian. Sarino’s is inspired by Italian craftmanship, cooking techniques and a passion for fresh, local produce that has been handed down through generations. Sarino’s is bringing Italian heritage and dedication to The Hills community.
The extensive beverage list will include a selection of over 200 wines and reinvented classic Italian cocktails. Private liquor cabinets to stow top shelf bottles will also be available for guests to access each time they visit, these top drops will be best enjoyed in the sultry lounge and bar adjoining the restaurant.

About the Chef
Introducing Sarino’s Restaurant and Bar Executive Head Chef, Joe Cavallo; well known as one of the first chefs to bring the Italian tradition of aperitivo to Sydney, Joe is now leading the charge at Sarino’s.
Mentored by celebrity chef Darren Simpson, Joe’s core inspiration comes from an upbringing steeped in food. Born to a Sicilian mother and a Calabrian father, a passion for food and cooking was instilled at a young age.
Much like Joe’s upbringing and background, Sarino’s menu will celebrate Momento Hospitality owner, Ross Colosimo’s family heritage, showcasing the flavours and influences of Italian cuisine whilst using modern cooking techniques to recreate traditional favourites in surprising ways.
Also at the helm is Momento Hospitality Group Executive Chef, Sam Young who has had an extensive career that has seen him travel the globe, working in some of the world’s most renowned kitchens. His prestigious posts include The Summit Restaurant, London’s renowned Oxo Tower Restaurant, and 5th Floor Restaurant Harvey Nichols and on our home soil under renowned chef, Peter Doyle at Pier Restaurant.

Private Dining and Functions
Guests looking for a more exclusive dining setting can book one of Sarino’s three decadent private dining rooms.
A luxe private function area sits on level two of Mullane’s Hotel, an ideal exclusive setting for corporate events from the buzzing Norwest Business Park and social functions alike.
On the same level as Sarino’s is a dedicated on-site craft distillery which will produce almond liqueur for affogatos and fresh limoncello, reminiscent of Positano summers, alongside a range of craft spirits.
